Climate: Mediterranean coastline, hot and dry
Winemaking process: Harvested and selected by machine at night, then crushed. Cooling of the harvest to 10°, followed by maceration on the skin under dry ice before pressing. Selection of our best free-run juice before cold fermentation in thermo-regulated stainless steel vats and aging on fine lees.
Volume: 3000 bottles


Colour: Intense yellow color, bright golden highlights.
Nose: Lemony aromas with hints of yellow fruit and apricot.
Mouth: Ample attack evolving into a beautiful vivacity, good length on the palate, well-balanced. Accompanied by aromas of lemon and yellow fruit, apricots. Iodized, mineral finish.
Food matching: Serve with semi-cooked foie gras, roasted quince chutney or fillet of bass en papillote, beurre blanc with chorizo. Lemon and limoncello tiramisu.
