Lively and rich attack, interesting length, balanced
and harmonious. Accompanied by aromas of cherry, lemon, and
spices. Mineral and saline finish.
Ideal with grilled lamb chops,
ratatouille, Thai beef salad, or a Tarte Tropézienne.

Winemaking

crushed. Cooling of the harvest to
10°C followed by skin maceration under dry ice
before pressing. Selection of free-run juice before
cold fermentation in temperature-controlled stainless steel vats and
aging on fine lees.
The Rosé Prestige is made up of the first juices of a parcel selection resulting from a gentle maceration and a slow pressing in the absence of air.
Its pale pink, peach, limpid and shiny hue is an invitation to tasting.
Its intense and complex nose directs you to flavors of citrus, thiolated with some notes of red fruits.. white and strawberry. Beautiful liveliness on the attack followed by a round and full structure giving a particularly long finish. Very nice balance.
Composed of 60% Grenache, 20% Cinsault, 15% Tibouren, 5% Syrah, this cuvée is ideal with Mediterranean cuisine, lamb chops, zucchini gratin, Niçoise salad.

White 2025
Pale yellow color, silvery and shiny greens.
Citrus, sweet lemon from Menton, accompanied by notes of
white flowers.
Lively and fresh attack, good length on the palate,
balanced, lively. Accompanied by citrus aromas, with hints of lemon and spices.
Salty and mineral finish.
Ideal with aïoli or chicken supreme with morels, mashed potatoes, poached pear with caramel sauce.

This wine, made from 100% Rolle grapes, also called Vermentino, is the result of a gentle maceration and slow pressing in an airtight environment. It has a pale color with slightly silvery reflections and a great brilliance.
The complexity of its nose delivers aromas of citrus fruits such as the sweet lemon of Menton while harmoniously rubbing shoulders with notes of white flowers, fleur de Lys.
Its freshness in mouth, helped by a beautiful acidity, develops gradually on the roundness leaving at the end a long aromatic persistence peppered, with some floral notes, white flower, lemon and honey.
Perfect to accompany a cheese platter, fresh goat cheese or a lemon dessert.

Red 2023
Beautiful intense red color with purple highlights.
Notes of red fruit, cherry with hints of
strawberry and roasted aromas.
Lively on the palate with strawberry aromas and
a powerful structure, finishing with smooth notes of
chocolate and wood.
Ideal with a confit shoulder of lamb, olive purée,
or a goat cheese, honey, and dried apricot brick salad,
and a dark chocolate and caramel crunch.

Winemaking
Manual harvesting with sorting in the vineyard, reception
of the harvest, destemming/crushing, and vatting.
Alcoholic fermentation and long maceration for 3 weeks to 1 month.
Pumping over, devatting, juice separation (draining/pressing),
malolactic fermentation in vats.
Barrel aging in oak barrels and terracotta amphorae.
Aged for 12 months.
Racking and bottling.
Aged for 12 months in oak barrels after three weeks of traditional fermentation.
This wine is made from 3 grape varieties: 70% Syrah, 25% Cabernet Sauvignon, 5% Mourvèdre
Beautiful purple color with purple reflections. The first nose is intense which gives it a slightly wild character where we find notes of undergrowth, black fruits, with vanilla and roasted nuances. Warm on the palate, it presents slightly woody tannins, ready to melt and which presides over a good aging potential.
Ideal to accompany dishes based on Wild game, hare stew, dishes in sauce such as Provencal stew, cheese with a strong character.
Drink at a temperature of 18 C, preferably decant one hour before serving.
