Winemaking
Harvested and sorted by machine at night, then crushing the berries. Cooling of the harvest to 10° followed by maceration on the skin under dry ice before pressing. Selection of free-run juices before cold fermentation in thermo-regulated stainless steel vats and aging on fine lees.

Cuvée 2S Blanc
Cette cuvée, composée à 100% de viognier, atypique pour la région est le résultat d’une réflexion personnelle. Les raisins sont petits, ronds, fermes et blancs.
This cuvée, composed of 100% viognier, atypical for the region, is the result of a personal reflection. The grapes are small, round, firm and white. Beautiful intense golden yellow color, golden and brilliant reflections. The nose is of a beautiful intensity dominated by floral touches, such as lavender, accompanied with some notes of yellow fruits. The attack is ample evolving towards a beautiful vivacity, with an iodized and mineral finish. This wine, with a great volume in mouth, will accompany foie gras, fish with its white butter or a lemon or fruity dessert.
Le nez est d’une belle intensité dominé par des touches florales, telle la lavande, accompagnées avec quelques notes de fruits jaunes.
L’attaque est ample évoluant vers une belle vivacité, avec une fin de bouche iodé et minérale.
Ce vin, présentant un grand volume en bouche, accompagnera foie gras, poisson avec son beurre blanc ou un dessert citronné ou fruité.

RED 2020

Carmine red, pink reflections, limpid and brilliant.

Red fruits, gooseberry evolving into notes of strawberries, lightly toasted.

Lively attack, light palate with a nice structure. Fresh and supple, accompanied by aromas of strawberries.

Ideal as an accompaniment to red meat in sauce, or for cheese.

Winemaking
Harvested by hand, followed by a passage through our destemmer sorting table and crushing of the berries, vatting then short maceration during fermentation at 25°, punching down and pumping over. Devatting at the end of fermentation followed by aging in stainless steel vats for 6 months.

Cuvée 2S Rouge
The Rosé Prestige is made from the first juices of a parcel selection resulting from a soft maceration and a slow pressing protected from the air. Its pale pink, peachy, clear and brilliant color is an invitation to wine tasting. Its intense and complex nose leads you on citrus flavors, thiole with some notes of red fruits. white and strawberry. Beautiful sharpness in attack followed by a round and full structure giving a particularly long finish. Very nice balance. Composed of 60% Grenache, 20% Cinsault, 15% Tibouren, 5% Syrah, this wine is ideal with Mediterranean cuisine, lamb chops, zucchini gratin, Nicoise salad.
Dominante de Syrah avec une pointe de Cabernet Sauvignon et de Grenache, le 2S Rouge est une sélection de nos meilleures barriques.
Superbe couleur pourpre aux reflets nacrés.
L’expression aromatique est très intense et complexe. L’attaque est souple sur de beaux tanins fondus.
Il s’ouvre totalement au il de la conversation laissant au final une sensation de grande élégance.
