Description
Having been aged for 12 months in oak barrels after three weeks of traditional fermentation. Beautiful purple colour with purple tints. The first nose is intense which gives it a slightly wild character with notes of undergrowth, black fruits, with hints of vanilla and roasted coffee. Warm on the palate, it presents slightly woody tannins, ready to melt and which preside over a good ageing potential.
Suggested dishes
Wild game, hare stew, dishes in sauce such as daube provençale, cheese with a strong character.
Drink at a temperature of 18 C, preferably decant one hour before serving.
