Climate : Mediterranean coastline, hot and dry.
Winemaking process : Harvested by hand followed by a passage in our sorting table and crushing of the berries. Cooling of
the harvest to 10°C, then skin maceration under dry ice before pressing. We select our best free-run juice before cold fermentation in thermo-regulated tanks and ageing on fine lees in concrete eggs and stainless steel tanks.

Colour :Superb salmon-pink color with pearly highlights.
Nose : Floral nose, notes of white peaches underlined by a spicy, salty character.
Mouth: Lively, fresh attack, well-balanced. Long finish with white peach aromas. The same notes as on the nose, with an iodized, mineral and spicy finish.
Food pairing :Perfect with risotto of snacked scallops, truffle and parmesan jus, or with lobster spaghettonis. A mango-lime cheesecake.
